Fruit Pizza



Fruit Pizza

This has been one of my all-time favorite “healthier” dessert options.

Ingredients:

  • 18 oz. package of refrigerated sugar cookie dough
  • 8 oz. package of thawed frozen whipped topping
  • 8 oz. package of softened cream cheese
  • 2 cups of sliced fruit of your choice

OPTIONAL:
  • ½ cup of white sugar
  • 1 tablespoon cornstarch
  • ½ cup of orange juice
  • 1 pinch of salt
  • 2 tablespoons of lemon juice
  • ¼ cup of water
  • ½ teaspoon of orange zest

Directions:
Preheat your oven to 350 degrees. Grease a pizza pan, and arrange the cookie dough to cover the entire pan, overlapping the edges if needed. Make sure to press the cookie dough so that it is flat on the pizza pan. Bake the dough for approximately 10 to 12 minutes, or until golden in color. Allow the cookie to cool. In a mixing bowl combine the cream cheese, and gently fold in the thawed whipped topping. Spread out evenly over the cookie. Chill until cool. Make sure your fruit is sliced so it can lay on the cookie. Position fruit starting at the outside edge of the cookie and working your way inward until you reach the center. 

OPTIONAL STEP: 
You can make a glaze to place over the top of the fruit on the cookie if you wish. In a saucepan combine the sugar, cornstarch, orange juice, salt, lemon juice, and water. Bring to a boil over medium heat, and cook for 1 or 2 minutes until the sauce is thickened. Take the pan off of the heat and add the orange zest. Make sure to allow sauce to cool, but do not let it sit too long and set up. Spread the sauce over the fruit and chill for 2 hours.

Additional notes: 
If you choose to use bananas for the fruit, dip the sliced bananas into lemon juice to prevent browning.You can also use marshmallow fluff instead of the whipped topping.
